well, I actually use a esp32mx-e with ethernet on mine. since I wanted it rack mount I built in a usb and ethernet passthru to the front. I have the esp inside and plug them into the back passthru to expose the ports in front

They are cheap and easy, the expanders run off 3.3V and the 5v feeds to the shinny connectors and esp. I would use the black connectors first for experimenting. Thats 16 gpios

Thats some example yaml for expander port. But the i2c pins are dependent on the esp you use and of course take out the LAN and LCP stuff and add for the ports you want to activate. You need to assign each chip an id based on the 4 addresses.
