You should consider this board, I took it apart it's based on an STM32 and WIZ5500, it's quite nice basically a combo of Arduino+ 8Ch Relay + Optocouplers + Ethernet Shield in a nice enclosure, it has programming pins if your inclined to reprogram

Depends on setup, but the idea with NC is if someone tampers with it, it alarms, often the PIR sensors themself will have anti tamper function built in though. All you need to do is get a multimeter and check if its active or not to be sure

i got the same problem with my shutters. they use a secret code to manipulate each signal so you need to have the key and learn every remote. almost impossible to get around that.

History stats sensor will tell you how long a light has been on. Use a template sensor to multiply the time by the light's supposed power rating to get energy used per day (or whatever time you want).

when the 4th bulb came in i used it as a test bulb to try and fix the HA integration that controls them, while I was doing that itself plugged into a lead that was plugged into a socket meter and to be honest I only glanced at it a few times, it wasn't my primary concern at the time lol
