There's no need to allow data to be sent to foreign cloud servers. Broadlink IR works fine with HA if disconnected from internet (Linux based kernel routers can block devices in Forward chain to keep them on lan access only; in some Asus routers this can be accessed through GUI)

It depends if the device is enabled to have local controls (for instance Google Chromecast/Home/Nest won't function as they require cloud connection)

But devices like Philips Hue Bridge, Xiaomi Yeelight, Xiaomi Gateway (although I would recommend completely replacing Xiaomi Gateway with zigbee2mqtt or deCONZ) work in HA without internet access

yeah that's what i went by. aimed to hit 10,000 steps a day, and average a 1000 calorie per day (or more) deficit. nothing too uncomfortable, but within reason. at 1000 kcal/day deficit, that's 2 lbs a week.
