Yeah, I have a Bosch Dishwasher with Home Connect. It works well. There's the normal integration, but also there's one on HACS which is local too. Can see the progress, end time, start programs. There are some things that don't seem to be available in the Home Connect integration (like enabling Extra Dry), but you can do them on the machine or in the Home Connect app. I've been happy with it all
I basically use it to start the program, and notify me when it's done

Last night, I used up the leftover aquachile negro and tried to repro the aquachile negro ribeye I had at a restaurant recently. I strained it, figuring it had leached all it could out of the solids, to match the consistency of the one in the restaurant had. I warmed it in a saucier before grilling the steak. Grilled the steak as normal with just salt and a healthy dose of black pepper, sliced it, topped it with fresh red onion and cuke slices and poured the aquachile negro over the top. It was exactly as I had in the restaurant!

After successfully cooking fish and now eggs in a stainless steel pan, I'm almost convinced I don't need a nonstick pan anymore
We exclusively use stainless or cast iron. Have never had stickage issues.
Yeah proper technique with preheating the pan seems to be all that's needed

If the pan's temperature is at or above the Leidenfrost point, which is approximately 193 °C (379 °F) for water, the water skitters across the pan and takes longer to evaporate than it would take if the water droplets had been sprinkled onto a cooler pan.
I thought the temp was higher, but this + a high temp oil takes care of fish for me

First time making fries at home and they turned out amazing
Crispy outside, soft inside. Fried at 130C for about 10 minutes, then put in the freezer for 4 hours, then fried again at 180C until done

Breakfast: scrambled egg, home fries, and sausage.
The other thing I do is oil the meat/fish and not the pan. It helps reduce the amount of polymerized oil on the pan where the protein isn't touching.
Speaking of... I scored some yellowtail jack out of Newport Beach, CA the other day. Lazy marinade in some Yuzu Banchan and then a quick sear before serving atop a salad
The seaweed salad in the top right was made with seaweed I harvested locally in the Santa Cruz, CA area.

i get alot of that
I meant more when cooking a single piece of protein like the fish in my picture or searing off a pork chop for example. Rather than putting oil in the pan, I heat a dry pan and rub some oil on the food itself. Then I place the oiled food in the dry pan. Thay way the oil away from the food isn't polymerizing and making cleanup more difficult.
I always feel like it's going to burn away and I'm going to have a bad time
But I've heard that as well
not saying its wrong but thats the first time ive heard of it
Or when food is sliding around, it will continue to deposit some of that oil around the pan, reducing the cushion for the food
once its sliding though it should be flipped
Gotta cook the middle at some point
Well, usually if I'm searing off something that needs cooking in the middle like a pork chop, then it's oil the chop, toss in a screaming hot pan (preheated with the oven), flip as soon as it releases, and transfer to the hot oven to finish.
or a reverse sear where the meat cooks through nearly up to desired temp in the oven first and then just a sear in the pan before resting and serving

That's where I'm too lazy and don't want to heat something else

Another key is don't put stuff from the fridge directly into the hot pan. It will stick
I mean.. in a way it's enabling more laziness because you preheat the oven with the pan in it so you're ready to rock whenever you want

a good (but kinda unhealthy) chef's snack when breaking down a chicken is to fry up the heart in some garlic butter and finish with a tiny splash of red wine. the only problem is you'll realize you want 30 more chicken hearts.

Today I swapped out my Vietnamese instant coffee with sugar for some Korean instant coffee with just coffee + non dairy creamer. I need to go back to honoring my intermittent fasting schedule better.
It's weird because I'm used to sugar but they aren't bad quality beans so it's at least tasty coffee rather than burnt.

i have a set of victorinox knives (came across a complete set with carrying case at a second hand shop). if you aren't good at keeping them sharp regularly they are best left to a professional for setting them up again. the guy who did mine after i bought them said they were the toughest ones he had worked on. they should get sent away again now... almost 30 years later... so i like them.

The jail is administered by the Mobile County Sheriff's Department. But the County Building Maintenance department maintains the building itself. Which is where I come in.
My specific department is responsible for ALL county buildings in the entire county. I and one other happen to be permanently assigned to the jail, since it's one of the larger complexes we're responsible for.

Makes up for the fact that, for the most part there are no outside facilities here. There are plans for an entirely new complex being drafted now, moved a bit, because this jail is in an awkward spot, being literal spitting distance from a major highway. People driving by can literally look down into the complex.
And the new one is going to have separate outside rec yards for every housing complex.

No. Sec.
The biggest problem at this location is there's nowhere left to expand, and this jail is used by not just the county, but by the city it is in as well. A city of just under 300k. And the county has 500k people. And also has room sharing with a few other counties that have smaller facilities with less room.
Plus most of the other small cities in this county also do not have anything more than a single drunk tank or similar.

ooh boi do i have fun news for you, you can get smoked many things to add to food, sugar included. used it for some random things and it can easily elevate dishes if you dont have a smoker at hand for easy smoking

This morning I made an air fryer "banana split" for breakfast. Cinnamon, Greek yogurt mixed with a little maple syrup for sweetness, crumbled pecans, and rainbow sprinkles on top a split banana that was air fried for 6 minutes @ 400F. 
My airfryer changed my life. No more long waits for food, anything ready in less than 25 minutes

That evening the Peri Peri was over sauted Salmon with rice and brocolini, CHicken thighs are the typical protein. This picture is the sauce. It was made last summer but freezes and returns wonderfully. I use Malawi Piquante peppers from the garden the correct pepper is Birds eye chili but the Malawi Piquantes are very versatile in sauces, jellys, stuffed, and sweet pickled. My favorite is to stuff them with a blend of goat cheese, cream cheese, roasted pumpkin seed, and top with everything bagel mix.
