I don't really think we need to explicitly see vi grieve though. Because we know it's not exactly who she is. We know she's devastated by the seeming loss of jinx. But she also still has caitlyn with her and both we and the characters know they'll get through it.

They literally met him once. Them being there for the finale was more of a solidarity thing. Warwick continuing to be used was more so to highlight a disrespect viktor had developed for other people atonamy and driving home how much he's lost sight of his actual vision to improve people's lives.
Jinx and vi having to fight him was more so to just give them something personal to have in the fight. Which works well for the situation and drives vi not having closer on vander like jinx does.

Also realised the reason jinx probably jumped as her final suicide attempt was probably because ekko mentioned her blowing him as well. And jinx wanted to get him out of the blast radius

And the fact viktor sees ekko as a green streak of light in his gay jesus vision. Highlighting him against a sky of silent stars. As the only one moving for progress

Also Ekko was like "Sometimes to go forward, you have to leave a few things behind" in this case Vi. She's breaking the cycle without either of them having to die.

The entire fight she was telling vi this is it. She's leaving once this is done.
She also had to fake her death because vi was literally never going to let go of her. No matter what, vi is always going to love jinx, and it will just hurt her more and more. She's just incapable of letting go, evident with her still hoping vander in Warwick when he's very clearly gone.
Jinx had to physically remove herself from the cycle to make it so vi could ever have a normal life
