I’ve spent a lot of time this year watching really great shows for example I saw Sopranos for the first time and now I’m watching Mad Men, shows that are obviously the best of the best but they know how to pace themselves like an actual show would and feel like a decent investment. Many of these Disney+ shows feel so half baked and uneven where I really want to get excited for them and feel the same rush other people are feeling but I can’t always bring myself to.

This is the issue. There's a difference between saying you enjoyed something, and calling it a masterpiece. Former just implies appreciation, the latter implies tangible qualities you can point to to rank it.
For an opposite example, imagine if I said "Andor is the worst show ever made, literal dogshit, fails at every level". You'd be puzzled. I'm not just voicing lack of appreciation, I'm implying there are clear aspects of the show I can point to to call it these things.
A lot of discourse I see around SW online is born of this reactive behaviour, someone will imply quality (or lack there of) to an extreme and this will generate discord, usually toxic one, because despite a 0/10 scale having ten numbers most can seemly only use 0, 7 and 10.
