considering switching bench press, pullups and OHP on their respective days to 5x5?
That'd be fine
That'd pull the volume to over 20 weekly sets for pushing and pulling. I'd probably maintain 3 sets and see how you progress. This is quite volume heavy already for a beginner imo

Keep your rep ranges between 5 and 30 reps
Since you're not hyper fixated on 1RM strength, there's no reason to go below five reps
