I can just see exercise selection on that day table. First thing that I notice is you have more pushing volume than you do pulling volume. This may cause a lack of structural balance, which mah lead to shoulder problems. I'd do as much or more pulling volume.

I'd also do leg curls AFTER bulgarian lunges

Also do you think this 5-3-1 would work well if I was aiming for a calisthenics/aesthetic body? Just using weights alongside the calisthenics to speed up the process.

I'm assuming you'll be doing:
3 sets of 5/3/1 push?
3-4 sets of push accessory?
5 sets of pull accessory?

I'd probably do something like this instead
3 sets of 5/3/1 push
3 heavy pull sets
4 sets of push accessory
4-5 sets of pull accessory

One day go heavy one pull-ups and go for volume on rows. The other day swap it around.

I was thinking of the 531 Jim Wendler cycle but I decided last moment to change it to upper lower. I decided on the sets and reps similar to your suggestions but it being more even each day. Also I’m not looking for volume on leg days as I’m aiming for the calisthenics aesthetic body but a little bit bigger and I want to speed up the process with weights. Do all my final changes in the spreadsheet look good or do you recommend any changes?

I'd change the 5-7 to 8-10
