Other than ofc having other people play with you, is there anything special or beneficial for hosting a modpack on a server and playing it rather than just doing it via a mod launcher and single player world?

I honestly don't think so. Plus you'd have a ping to deal with when running it on a server.

there is one benefit:
a lot of modpacks allow you to chunkload stuff like your farms, on a server chunkloaded stuff will continue to work when you have the game closed, in singleplayer chunkloaded stuff will only continue to work while you are in the game
