i sear em with a side tray that can melt non stick and aluminum. then put em in my bbq with charcoal and wood, let em slow cook for a cpl hours and baste them with a sauce.

baste about every 30 mins when tending to fire etc.

steak spice and coriander for dry spices. Guinness based sauce with a bit of ghost pepper/reaper with yellow sriracha, maple syrup and sesame oil.
