No food in the house so making some bootleg fried noodles and pan seared teriyaki chicken fillets

if you ever feel bored, get 5g for ~30$ of the good real stuff. Then ground it in a mortar, add hot (not boiling) water to it. Use that to cook rice in. Taste the rice. You will understand 😁

oh gosh i havent made one in years hahaha
in all honesty, it's just about temperature control and using of egg whites to coagulate bones and mirepoix so you get a nice golden colour
you can start with whatever stock you want, reduce that down by half and start a different stock and just add that onto your reduced stock and reduce it again by half
it pretty much concentrates the stock by 1.75x
you can keep repeating this process until you get a nice flavor from it 🙂
the lazy way is just doubling the amount of ingredients and reduce by half

I just remember there being a thing with Adding ice to bind the cloudiness
its all about temperature control honestly. using egg whites can also help with removing impurities 🙂
it's mainly the leftover fats in your stock that makes it cloudy
havent heard or tried adding ice. This is just the way I was taught and it usually comes out quite clear
and you can also pass it through a cheese cloth + fine chinois

Do you know how to prevent the egg white from sticking to the egg shell while trying to peel it?
I’ve seen this 
its based on multiple things:
- If your eggs are "old", then nothing will prevent that.
- After you take out the eggs from the boiling water, immeadiately put them into cold - better iced - water. It shrinks back the membranes
- You need to have pierced the eggshell with a needle (small hole) so the egg doesnt expand too much

From my experience I don’t need to do anything when growing pumpkins, I live where there’s many bugs but they don’t eat my pumpkins
