blue is for fish i believe.. red meat, green veggy and white.... im not sure about this rn. this is from the top of my head rn. but i have a blue one and it works fine, just clean before you put veggies after raw meat i guess 🙂

I've still had some pretty good all beef meatballs though, in that case it's all about the mixture. I like a good diced onion, garlic, salt and pepper, some Worcestershire sauce, a tiny bit of Mustard, with Italian breadcrumbs and an egg. A very savory beef meatball :)
Bonus points if parmesean added too

basted it in a smokey bbq sauce with a hint of sweet chili. real maple syrup and a hint of ghost pepper/reaper/yellow sriracha sauce.
silky sweet front with the hint of Mesquite wood flavour, and a flare at the back that isnt offensive

you dont need much of that before it becomes too dominent

using real maple syrup instead of just garbage table syrup added a great sweetness with true natural sugar like brown sugar which could be used instead if real maple syrup isnt available.
but if using brown sugar going to need more liquid like maybe using some of the pork fat from cooking them wrapped in aluminum foil to start.

Would you recommend Weber smokers? I’ve been wanting to make some ribs but I only have a charcoal rib and i hear the results are the same as a smoker
But smokers in general are about 200-300 especially webers
ive not used one. i only use my cast tray in my bbq to smoke and i do just fine. just a bit different n more attentive than having auto fed smokers.
tray nice because i can either grill and just burn charcoal and wood quickly with a normal cook session or i can use gas to start the charcoal/bricket with wood for slow cook smoking and coast gas free.

The menu was for a beer pairing with an SF brewery. We did this as the app (beet cured king salmon, beets five ways, lemon burre blanc and pea sprouts) with a champagne yeasted lemon sour beer. Then a cold orrecchiette as a “salad” ( basil oil and macadamia truffle puree, garnished with pressed green garlic) paired with a light brown hefe. Main course was a hanger steak (wood ear and chanterelle mushroom gnocchi and a carrot demiglace), paired with a dopplebock. Then dessert we did almond pannacotta (orange blossom honey macerated raspberry and rhubarb with a mint oil and hazelnut crisp) paired with a marshmallow stout.
