you need to collect 1000 stars/moons to finish a path, and every 100 stars/moons you collect, you unlock 1 of the rewards, and the first reward you unlock straight away after buying the path

but you can only have 1 path active at once, its not in the screenshot but there is a button that says 'active', which allows you to change which path you want to unlock

basically how this works is in the running state, you can preform a backjump by holding the opposite direction you're facing and then jumping, similar to the slingshot tech from smash ultimate. when preforming the sword dash (which you can jump cancel) the game still thinks you're in the running state, so you can preform a back jump during the attack and into your midair attack

since you are able to customize your moveset, it opens windows to tons of combo options
