Will my save data carry over from the Prologue/Demo/Beta to release?

Yes, the current plan is to preserve your progress when HELLCARD is released.

For those that may want to start from scratch with release, how would I go about erasing my progress?

Press win+r, type %appdata% and then enter. Find all hellcard related folders in the folder that opens and delete them. Then start Hellcard. If you have cloud save enabled start the game and alt tab to windows while on postument screen (The Archive) and then do the deleting. Then close the game so the cloud won't download old saves 🙂

We might have to add "reset profile" button, hmmm.

OR

simpler way - in the launcher (the Archive) create a new profile
