there are sorta two types of canards, either ones that are use for pitch/roll control (F-45/Eurofighter) or are just used to point downwind for stability (SU-34 and other flanker types)

if you want pitch authority out of canards you need to deflect them MUCH more than horizontal stabs

mostly cause of their proximity to the center of mass, i believe

Higher deflection angles naturally is a little less favourable for stealth

not that it breaks it, but there has to be a very good reason to have them

im not sure what the J-20 does with it's canard, but i assume it's for pitch authority

personally, i dont believe any claim about the J-20 stealth, cause a lot of people say "we've picked it up on radar plenty of times", but also the F-35 uses Radar deflectors a lot of the time to help allied stations locate it when doing domestic flights

No no, he’s got a point. Because the canards aren’t hidden behind the wing like the stabilators are on the 35 and 22, they have a higher RCS.

i see the idea, but from the radar's perpective it doesn't change much, apart from when the canard is moving a lot, which is only the case at low speeds

Not quite, since canards are typically canted to not spoil airflow, as said above.
