/npc villager --profession profession_name for the profession
/npc villager --type biome_type for the type
/npc create bob --type villager --profession profession_name --type biome_type to cram all of the above into one line

profession types are ARMORER, BUTCHER, CARTOGRAPHER, CLERIC, FARMER, FISHERMAN, FLETCHER, LEATHERWORKER, LIBRARIAN, MASON, NITWIT, NONE, SHEPHERD, TOOLSMITH, and WEAPONSMITH

types are DESERT, JUNGLE, PLAINS, SAVANNA, SNOW, SWAMP, and TAIGA

But, what about mountable npc?

The npc is mountable if the type is Player. but when i change it to mob or smh its not mountable
