We support only the latest patch-version of Minecraft for any recent main version (and Mojang, Spigot, Paper, etc. all generally also follow the same rule).

"Patch version" means the last number in a version label, for example in 1.18.2, the main version is 1.18, and the patch version is .2.
So if 1.18.2 is the latest patch version, then 1.18.1, and 1.18(.0) are all outdated patch versions, and therefore are unsupported.

Note that we do still support recent older main versions (such as 1.17 and 1.16) so long as you are on the latest patch-version of those main versions (like 1.17.1 and 1.16.5).

As long as you don't use NMS, they should usually just work - either way if you decide to use custom plugins on your server you should be able to update them, you can't stay on outdated versions forever, eventually you'll have to update

If you need custom behavior like that, consider using something like #1026104994149171200 scripts, which generally don't need any updating work other then updating Denizen itself (which is usually updated the same day Minecraft releases)

Yes, it's an outdated patch version - pretty much no one supports it (I.e. Paper, us, a fair bit of other plugins, etc.).
I heavily suggest you update, using an outdated patch version is putting your server at risk of bugs, crashes, exploits, etc. and makes it impossible for anyone to support you as mentioned above

Other then that it should be as simple as:

  • Stop your server
  • Update your server jar file
  • Update all of your plugins to their latest versions
  • Start your server back up

I'd recommend testing on a local copy of your server first, just to make sure all of the plugins you use work well and all

Well, I have no idea what host do you use / how does it work, generally just find whatever interface they have for editing files, and your server jar file should be in the root folder
