It’s just that the protocollib error seems to be a compatibility error

I’m not sure what versions of protocollib work with what Minecraft version

Not sure, 1.12.2 is too old for me. I'm always testing things on the recent Minecraft version.

But you could test on an empty 1.12.2 Server, to sort pluginconflicts out.

With Paper your Server needs less server resources and is more performant.
