I often find myself wanting to know how many crews are in a quarter without searching for every single one, and I also often find myself wanting to know the amount of resource that is in one storage room.

If you hover over a quarter in crew assignment mode you can check that

there can only be 6 crew. there can not be more than 3 crews because "crews" is a multiple of "crew", and since 2 is the minimum to define crew as "crews" so you can guess that its less than 3 crews, or in bad case scenario it can be 1 crews for 4 or 6 crew in one quarters

this isnt very... useful? like why would you need to know how much steel do you have in a storage 4x3 when you can just see how much steel the ship has overall
and knowing how much crew is in a single quarter is legitemately... useless? i dont understand why this would be implemented

I dont fully understand what you mean by this, but if your looking for the amount of resources in a storage pallet, simply adding up whats in there seems fairly simple, same for crew, since you can just check the crew roles for the amount of them you have.
