I think Uranium ore is too rare, when you find an Uranium Asteroid it has Uranium for 1 or 2 enriched Uranium, that makes building reactors super expensive, even small ones.
I haven't been playing for a lot of time but this is what I feel like when I want to create a new ship and it is super expensive just because of the Uranium.

Inside the red zone of the sun you can find rare resources such as gold, tristeel, carbon an uranium in VERY huge quantities
Use a sundiver with some Tractor Beams, pull the asteroid out of the red zone and mine it

In addition to what King Slime said, in higher tier difficulty star systems, trade stations will often have a larger amount of enriched uranium you can purchase (you will need money for this, obviously).
In addition, you can also try out a few mods that make changes to asteroids, but there are some mods out there that will make you swim in resources, so it may be tricky to get a balance that you like.
Afaik, there isn't a large scale rebalance of resource asteroids in the near future.
