well, text would just be the images in the gui/title folder or translation files (depending on which text you mean) and the buttons would be in sprites/widget

the answer is always the same: yes, if you wanna replace an image you use your own image with that same name
does the text need to be of size or its what ever
size ratios should stay the same else they will look streched/squashed ingame

For the last time: if you wanna change a texture you change the texture. Stop asking me if you need to replace the texture with a texture. Yes, you need to replace a texture to change a texture.
If you want a red wall you gotta paint the wall red, same logic.

Do you see a model file? Have I mentioned a model file? Is it something 3D that would have a need for a model file?

The output log will show you errors related to resource packs in Minecraft: Java Edition. Here is how you can enable it.
(PS: Optifine likes to hide vanilla errors/warnings for some weird reason, so always load the game up without it if you don't need it for your pack to work!)

don't have all the default files in your own pack
The game combines all textures for one thing (blocks and items, guis, entities etc.) into one large file called an "atlas".
If that file size becomes bigger than your graphics card can handle it will fail to load.

you have a copy of the default files somewhere for reference or for copying if you wanna edit them

Sounds like you have files that say they are .png but don't contain .png data.
Like renaming a .jpeg to .png
and then trying to load it as .png (which won't work)

all I see here is that the game loaded the vanilla resource pack
its pro0llly the jpg and missing files cuz

but yeah, clean up your pack first, then check for errors again
could literally be outdated shader files that screw over your pack for example
