What is the option where I create a mob from scratch?

Yes, I know it's a stupid question, but it's because I only made mods/addons for Minecraft BEDROCK, not for Java. Basically I don't know anything about how to start making the Java entity, does anyone know?👉👈

"Modded Entity" if you plan on making a mod.
"Optifine Entity" if you plan to make a model (variant) of an existing mob via Optifine (or similar mods).
No vanilla way to make/edit mob models.
