i noticed that i had a mark on the hat layer that i hadn't touched, and when i erased it, it erased the back of the left arm as well. so i turned on all of my layers, and the torso i had made is wrapped weirdly around the head layer. i assume it's because my uv map is acting weird and overlapping due to the increased resolution of the model, but i don't know why it's doing it.

you answered your own question, its because you increase the resolution
is there a way to fix that though?
If you go to edit mode, select a piece of the model you should be able to go to the texter map tab you usually only get in paint mode. There will be a highlighted shape that represents the unfolded texture of that selected piece and you can move the box in edit mode to a blank space and then paint there
