did you tick that mirror toggle next to the scale value?
if yes there is a reason it's disabled by default and there is a warning in the description of the option

You'd need to make an inverted copy of your model (Double Sided Cube plugin can help out with that),
Though that might be shaded differently ingame on one hand.
Alternatively in 1.21.4 and newer you could have separate models for separate display slots
what do you mean by might
"might" cause ingame shading is weird and sometimes stuff works as one wants it to work and sometimes it doesn't 🤷♂️

you can find plugins in Blockbench itself (unless they are exlcusively external)
that plugin is one that is in the official plugin "store" (not something where you buy stuff, but idk how else to call it)

it duplicates your selected cubes and inverts them (so they render inside out)
im a bit confused
so i invert the cubes, and then it will appear on the other side in the other hand?
because it doesnt do anything visual
yes, cause the inverted parts all only render the inside faces, no outside faces
so once you mirror it (which gives it a negative scale) the inside faces become outside faces and vice versa
hence why you could see the inside of your claws and arm
so once this is the same im done?
you won't need to adjust anything display settings wise
all you need to do is use that plugin on your model's cubes so they get duplicated and inverted and save it
(only use the plugin once, else you have a bunch of unecessary duplicate cubes)

converting to per-face uv shouldn't affect the texture at all

no its not per face its the cube button

it inverts the cube and flips the textures so it's the same thing again
if you have flat cubes with a north and south face don'T select those
