Because you apparently never told your model that the item would be in textures/item.

If you use the downloaded version of Blockbench it will automatically adjust the path here based on where you load the texture from or save it to.

If you use the website version you will need to manually specify the folder in the properties of the texture.

The texture name is not the problem.
The problem is that you didn't tell your model in which folder the texture is.

that or you never saved it directly to its current location from Blockbench (or didn't load it from there) before exporting the model
