You can remodel or retexture the Totem of Undying however you see fit.
I don't see what this has to do with the AJ (=Animated Java) plugin though.

Technically yes.
Though it's better if the texture are a multiple of 16 in width and height each. (it will work with other values too but those will affect the mipmap levels setting ingame)

You just put it in your pack and be done.
If it's an animated texture you will need a .mcmeta file like any other animated texture.
I know that I will need a file and what to write there, but I do not know how to put 100 pictures on 1 picture for the totem of immortality
