I don't have much knowledge about the mobile version, but you should check if mirror modeling is enabled. (just in case you need it : if you are on PC and the same thing happens, check if your ALT key is stuck)

And meshes act differently than cubes

Well, there is that Blockbench tab to toggle a virtual Alt key

Meshes resize in both directions, unless holding Alt, (so opposite of cubes), hence why wqb made the conclusion that they are likely using a mesh element
