Is it possible to have a different texture for when the item is in the players inventory, say a 2d 16x16 icon, and then have the model display as the 3d blockbench model when the player pulls out/equips the weapon?

yes, it's shaders that can be used with a resource pack
Shaders no longer refers to just "fancy lights and water" in Optifine etc. for example ^^

I can't guarantee whether the linked shader packs work in 1.21 though
at least that one person in that post had problems with them in 1.21, but maybe they did something wrong 🤷‍♂️ (hard to tell tbh and I didn't have time to personally use/test that shader in recent versions either)
