items are usually in a normal resource pack folder structure inside the mod's .jar file (just how you'd get the default assets from minecraft itself basically).
Mobs are usually not possible to be loaded into Blockbench since they are in .class files, which is compiled byte code that contains more information than just the model.
also y'all should make sure you have permission to do such things
well, if it's just for personal use it's fine, it only gets problematic if they try to share it
sometimes artists don't allow for personal use. recreation from scratch is what you'd have to do then.
