I've replaced the boat chest model with an f1 car but its obvious now that the model was made to small, how do I go about scaling it up, I see people online talking about doing it via the code but I don't really know what that means as I'm new to all this

why bother with code just use the scale tool in blockbench but if u want to do it in code i only know how to scale mobs soooooo yeah good luck

Yep, in this case just use blockbenches scale tool. The easiest if not only solution for optifine entities.
Because for mob models, the cube size does affect the UV, and therefore scaling a model in any other way than in code, is very likely to break your texture. In this case it doesn't matter as it's just a template texture, also optifine can't scale in code.
