On your item model, go to the Animation tab and search for a option with the text Entity
then, change the option to 3rd person

it's a recent feature that is used to visualize bedrock attachables

what you will do is make a custom scene with your manekin model, and use it in your item model

also, you can change the skin preview by going to settings
