How do I scale down a cuboid or anything so that the wireframes which are used for texture painting dont get squashed?

You can press the Auto-UV button which automatically fixes the UVs for you. It's a button located under the UV panel

If you want to pick a color from the model, there is a tool at the top in the paint tab that does this for you. In terms of picking colors from other parts of the screen, yeah, it's not absolutely perfect
