When I extrude it stretches out the sides too

you select a face and that'll show up in the top bar

Yes but when I do that it stretches out the things around it, and doesn't just extrude the mesh by itself like in the video of blender

you tap the extrude, not just select the face

it's the arrow icon there, yours is also in the top bar
