And while I'm at it, when making OptiFine custom entities, is it easy? Can you customize just about everything? If my current model doesn't work, then I plan on just making it an entirely new entity
You cannot change pivot points as far as I know about optifine.
Besides that, yeah you can do about everything.

Changing pivot points requires you to basically counter animate the default animations and merge that with your custom animation on top of it afaik (haven't done it myself before, just some stuff I have heard)

So they can have whatever pivots, the default animation just can't run then.

you can also use translation animations on the main bones
yeah you can customize about anything, so long as the original groups aren't edited in their pivot points. Subgroups is all you need
though if you want full on customization without 90 million bugs, I highly recommend you make all your subgroups within one folder (body folder to be exact)
