My VTC is planning an event for 27 March, there is a TMP Convoy on that date, and as I remember the other Event Servers were down for the Christmas Convoy and for Real Ops in October, Sim 2 also had to be shut down, will this be the same again?

I'm fairly sure they can run two servers on top of the normal servers. It might of been the case because they were official convoys and the expected attendance would be much higher than a community convoy. Also, you might want to put that in Feedback as it could go unseen.

I ain't sure if I'm going to join you guys, but it really sucks that you ain't allowed to drive with more then 2 trailers (with the exception of the base game triple) but it probably has its reasons why it ain't allowed any more

Ideally, you want people with as few trailers as possible as they're easier to steer which is quite self-explanatory why you shouldn't have it in convoys.
