Yeah, I am aware. Undercover, for one reason or another, had a lot of real life cutscenes of both cars not seen in the game, and cars which looked different to the ones in the game.
Most obvious example being, the stolen M6 which is the primary objective of the entire game due to the smuggled goods it includes.
In cutscenes, it is a simple metallic dark blue BMW M6 E63, while in game, it bears a grey color scheme with red accent and aftermarket rims.

Or the budget, which is likely the more probable answer. This was, I think, the first time Need For Speed used real life cutscenes. Not fancy green screen and backdrops unlike Most Wanted or Cut Scenes, or the busted scenes from NFS 1. THey certainly had a decent bit of budget to hire so many actors and actresses and set up all of these scenes like a proper action thriller of the late 2000s.

In the game cutscenes, and even the stats screen in the map menu, he is seen next to an orange Lamborghini Murcielago LP-640-4. In game however, the one instance where he shows up, he is seen driving a white Lamborghini Gallardo LP-560-4.

Some characters remained somewhat consistent at least. Nickles was seen, both in cutscenes and in-game, in a ZBII Dodge Viper SRT-10. Rose, while not entirely certain, was also I believe in a Porsche 911 997 of some sort in cutscenes and in-game, though the models of the cars used in cutscenes may have not been the Porsche 911 GT2 997.
