From coding websites I know you can isolate specific properties and make the AI randomly choose between them
So for example you can have a roaming racer R34, set up 3 or 4 bodykit combinations for the AI to choose, then set 10-15 rims to choose, 3 rim colors bronze, silver and black and then 15 paint colors to choose between for the body, you can also have some stickers to be placed in specific spots
