They say that it is Matches' DNA on the blade of the knife but during forensic tests, wouldn't the DNA come up as Bruce Wayne's?

With Batman tech being what it is, it’s not out of the realm of possibility that they’re lined with something that messes with the DNA recognition system.
It’s even pointed out in the dialogue “Those gloves ain’t going to protect you” so the fact they’re brought to the attention of the audience, there’s likely some level of intent

Ig that makes sense considering Arkham Batman's knowledge with altering dna cus now that I think of it, if he didn't have it thered be no way Batman would go undercover if he didn't have a way to mess with his DNA.

Technically it's Malone who gets his hand scanned and blood drawn during intake at Blackgate. There's no reason to think the GCPD has Bruce Wayne's fingerprints or DNA on file, so as far as they're concerned, it's Matches.
