What you are doing : Hello, so I am trying to set up a Wireguard VPN so all the traffic goes in VPS1 first, then gets on VPS2 (to avoid DDoS in this case). Wishing to use it as a "proxy" (idk if it's the right word for it).

One does not use VPS for "DDoS avoidance"
And you would have to provide actual details, and very much logs, which do exist for this, so don't say you don't have any, you do.
In fact, I am currently getting UDP flooded, this is the reason why I do this

Well, then submit a support ticket with the VPS provider. Nothing you can do until they null route the attacker. Real question is, why are you even being attacked at all?

However I fixed it, I had just to connect through the VPS to the other VPS
