Make sure to have frequent backups setup before uploading an experimental build in case you run into issues with it at any point!
I personally wouldn't until paper has released a stable build, but since we're talking about 1.21.x minecraft, just replacing the paper jar should be enough. I'd follow what Jupie is writing tho for this case.
Yes it's not necessarily recommended, that's why Bisect doesn't add it to the panel until a stable build is available :)

Another option, which is quite janky, is to keep the paper 1.21.8 selected, delete the paper jar that's already there, upload the 1.21.10 jar and rename it to the same as the 1.21.8 was
the issue is that it'll break if ther would be an update to paper 1.21.8

That is in the "Startup" tab, you need to change the Server Jar File to the name of the papermc snapshot jar that you are uploading
