Hi i'm a network engineer and i would like to know whether your infrastructure is feasible to our use case.
So in a scenario, once we claim a minecraft server for example will it be like a cloud providers such as Azure or AWS where we get a unique IP address with a port we choose or 1 IP (presuming its a reverse proxy) and we receive the port.

depends on what you get. with the dedicated IP addon, you get the IP and almost any port you wish (minecraft however will be defaulted to 25565) so you can set up services like a dynmap/bluemap and voice chat on an IP you like.
If you don't get this, you'll be on a shared IP. you'll get a random port for your server and iirc 5 additional random ports for extra services
the dedicated IP is part of the premium plan but can be separately purchased for budget
