Try deleting the WorldEdit config files and trying again?
Unless WorldEdit has a support forum/Discord or a plugin guru peeks in, it's trial-and-error refined by looking at the error.
Wait - why are you using 1.21.0?

1.21.0 has a major bug in it.
Like big enough Mojang won't detail what it is, just that it makes it so players can just crash the server.
Use 1.21.1 instead - see if maybe that fixes it?
Also, try WorldEdit 7.3.9. 7.3.10 is a beta release.

Because sometimes people like leveraging exploits?
I've suggested putting certain versions like 1.21.0 and 1.20.3 (randomly deletes bees) and 1.21.2 (makes Salmon all baby fish on world upgrade) behind a "glitched" category or something, but... 🤷♀️
