Ok so they will try to keep hold of all your servers information for as long as possible but, this is only in the case of how you end your service, if your server gets terminated due to not paying and not cancelling they will nuke everything after a few days

if you can still access your server and you have an unpaid invoice, when you pay it, you will still have access and it will still be there
if however, you can't access the server, and you pay the bill, you will need to open a ticket and ask them to restore the server
but it won't necessarily be the last state of the server
