Open the Minecraft Jar menu and hit reinstall. From the error it looks like the files didn't copy in right somehow.

Oh. Yeah, if you did the Instances wrong, that'll happen.
Important info to have had up front.
Make sure the current instance is the one you actually wanted.
(e.g. - world file is there? etc, etc.)

I'm saying make sure that when you swapped instances back you actually got the instance you wanted to run. We've had people unfamiliar with the feature make 3 empty instances and then accidentally throw their files away because they didn't read the instructions carefully.
The "I clicked OK before I could read the error/instructions" reaction that for some reason everyone (myself included sometimes) seems to have.

server-icon.png has to be a 64x64 png. Any other dimensions and it gets ignored.
