Because you suck at photo-ing. 😛. Obviously I'm joking. The key to getting a good run is throwing apples at everything and photographing them getting hit. Also, make sure your pictures are centered and that the pokemon isn't too obscured. Try to capture them while they are doing things that seem super natural and unique, like Bellossom dancing, pyukumuku using its big hand, alolan raichu surfing, etc.
Oh, and constantly scan with X. It really does help in finding new paths and stuff about your surroundings.

Step 1: Throw an apple at a mon. If it's stoic and doesn't move when you hit it, then hit it a couple more times, then it should react.
Step 2**: Also throw an illumina ball so the mon is both illuminated AND getting hit
Step 3: Zoom in on the pokemon as its getting hit while being illuminated, make sure it's in the center of the frame (or at least close to it)
Step 4: Take the photo
Step 5: Profit

You're talking about trainer fly. It's based on the special stat of the last pokemon you battled. You probably got the your pokemon thing thanks to ditto, as it transforming into your pokemon uses your pokemons special stat, not ditto's
