I watched the first episode to see what you were talking about. So far it's nothing amazing. the characters seem as cliche as character from other anime . I do like the idea of progression through science (even though obviously, it doesn't make sens that they are still alive at all).
I don't think there will ever be a plot. That it's just going to be invention after invention to rebuild humanity. That's how It feel after watching this first episode at least.

Well.... I'd say the trickiest part of that conveyor grabber is the part where you get to that first pair of paratroopas because you need to jump on them before you get too close. And if you time it wrong they steal your ride. That feels like it should be a little halfway through the conveyor instead of first obstacle

So, the issue with that, is it's entirely dependent on how fast you are in getting to that part of the conveyor. I'm realizing now I probably should have put it on an autoscroll to make the cycles not an issue
If you're in speedrun mode, it lines up so that literally none of the koopas are in your path

This one actually has some pretty smooth lines, a lot of the jumps are makeable without the cranes, and the ones that aren't line up so that if you immediately jump at full speed, it goes where you want it to
The track-bound crane slows it down a bit, but I swear there's a cheesy line in there by jumping across the koopas

So, locked warp blocks don't let the player go back through them, and give you more leeway on where to place them
And here's a design trick: Design a bunch of different arenas, as many as you can come up with, without planning a specific difficulty for them. Then play through them, or get someone to play through them, and rank their difficulty
If you need to, you can adjust the arenas after this to be more or less difficult
And then you can place the doors/warp blocks in an arbitrary order based on which is harder or easier
And you can scrap any of the ones that are less fun than you thought they'd be

Also in this kind of level Scroll Stops are your friend; if you have a solid line of blocks across an entire plane of the level, the camera won't move past that line.

I got three arenas so far. First one is relatively simple. You fight pom pom one on one and there are two Podoboos in the middle. Second you fight two on some semisolid platforms over lava. Third room is still a work in progress. It was originally just her in a room with two cat bill blasters, but that seemed easy in comparison to the last one.

@fervent cedar Blender is a great free option. They are also updating to version 2.8 version soon which should make it even better. There are a lot of solid tutorials on youtube so starting to learn 3d modeling should now be easier than ever.

Maybe check out some of the phone in the "Galaxy S" line from few years ago. They won't be "top of the line" because they will be 2 or 3 version behind but it's samsung high range phones so even the old one should be pretty good.
