You can activate alt sprites in the pokedex. Go to the fusion in your team and there should be an option to switch to the dex entry and there is a tab called sprites. Change it and restart the game

Yes, but what you started to draw wouldn't become a main sprite anyway for one because of the sheer size (fusions should be always roughly the same size as the body) and the reference is to strong, pure reference mons nearly never become mains

You can certainly try. Most important is that both used mons must have to be clearly recognizable. See my Lunagaron? It's a Glaceon/Zoroark, but since the Glaceon is nowhere to be seen except some colors it would never be a main, but also wasn't intended to be one.

How do you switch to the dex entry from your team pokemon? I see no option. I am also confused about needing to restart as when changing sprites in the dex I've never had to do so. It just automatically switches.

Ah okay, you don't need to restart the game entirely.
When you switch sprites and go back in the summary is still the old sprite, but when you exit the summary and enter back the new is there
