A suitable size would be 24 pixels by 24 pixels, with a custom pixel border.
Each black or white square would be 3 by 3 pixels, which should be enough for chess models.
If this size does not work, do a 32 by 32 pixels, with 4 by 4 pixel chess piece models, although the border would overlap the block by a couple of pixels
But what I'm really saying is, there should be a specific dedicated chess set in VS, with dedicated chess piece models.

I think they chose to add Omok over Chess specifically to accomodate the artstyle. Honestly, I prefer them adding more obscure games like this over Chess, it's more interesting.
Maybe something like Sittuyin instead? It shares an ancestor with Chess and the only difference between pieces is the color so you don't have to use complex designs
