for example, maybe you're finding yourself in a specific scenario that always leads to a gameover or an unrecoverable situation, or maybe there's one attack sweetheart does that always catches you by surprise

besides the fight itself, it might be worth it to take a look at how your party members are built like. maybe that one weapon or charm you've been using for a long while isn't as effective against sweetheart than it is with other enemies, or maybe there's a charm that can give you a very convenient effect against her bossfight

when i first played through the game, i found myself autopiloting most of the bossfights, and i ended up struggling against most of them, despite the fact that i had grinded a lot of exp and was considerably overleveled. small things like giving kel a heart-focused build instead of the usual speed-focused one, or changing up some of my characters abilities to acommodate for certain situations i would often find myself in

im retrying this time with different charms and skills, i think the biggest issue was that i was using kel to heal aubrey and using aubreys counter everytime, and kel always dies first and the whole thing kinda falls apart? i cant stop them from becoming angry so defence becomes difficult as well..i dont reallly remember most of the stuff i do but im trying this time with debuffs instead of just using offensive skills

i also dont really know what to do with kel since i dont really have any skills for him that do like something worth the amount of juice it takes

i lost again, after using the ultimate sweetheart always uses her own ultimate and it ends up one-shotting omori every time

from what i can understand based on what you wrote, the main issues seems to be that you can't keep up with the damage sweetheart is doing. you said that you tried to counteract this by literally countering with aubrey, which is smart, but between aubrey and sweetheart, one of them has a considerably bigger healthbar, so you'll need to adapt when she gets put on the ropes
if i were to give some recomendations, i'd say that the idea of debuffing sweetheart is good, specially her strength, and also checking what your options are to reduce the amount of heart you're losing per turn.
do you think you could keep a stable amount of heart by healing? if that's the case, you might want to prioritize HERO and give him the best possible stats.
maybe your characters just don't have enough defense? if that's the case, then evaluate the stats you're getting from your current equipment, and remember to check the emotion chart that hero gave you on the vast forest, at the beginning of the game. i think that by reading the chart, you'll understand why sweetheart starts dealing discouraging amounts of damage to you.
you might also be interested in more frequent usage of the GUARD skill, as it could make a big difference when used at just the right time

in case you haven't checked the emotion chart yet, remember that a big part of the game is the emotion system

Sad beats Happy

you might notice then, why one of sweetheart's most dangerous attacks is making all of your party angry, while she's locked in to the happy emotion. it's crucial to remove the Angry emotion from all of your party as quickly as possible. you might take unretaliated damage, which can be frustrating, but don't let that get you angry, as the alternative would be getting toasted in exchange for just a little bit of damage towards sweetheart.
the key advice in this bossfight is to play around sweetheart's strengths, and never let her get her win condition; she's the boss after all

this is exactly why you should change their emotion. Making the enemy waste a turn not attacking is a good thing.

if you're referring to || getting shady mole to ask you for your clams in exchange for his CLEMS ||, then you can't do that anymore. the opportunity is only given to you on TWO DAYS LEFT while on your way || out of the LAST RESORT, exclusively after defeating MR. JAWSUM and PLUTO ||.
additionally, the conditions for || shady mole to appear on LAST RESORT in the first place is that you must have completed his sidequest back in SPROUT MOLE VILLAGE, where he requests you get him a B.E.D., and as a favour for giving it to him, he will give you the "BLACKMAIL" item that you can use on ROSA, to get PESSI'S THING out of her hands ||

incase you're curious on how to get his entry: || you need to go pay him a visit at his hiding spot, which is in the PEARL CAVE, located directly to the right after entering the first toll gate in underwater highway. attached is an image visually pointing to his hiding spot (on the red circle)||

|| loading it will leave you on the elevator of last resort, at the 5th floor, right after defeating mr. jawsum and pluto. all you need to do is take the elevator down to the 1st floor, go through the depressing cutscene where aubrey and kel try to draw basil, and you'll encounter the shady mole on your way to the deep well. ||
|| once there, follow hero's instructions and take the taxi that will leave you at the entrance of the deep well. continue moving left until you reach the entry toll, which the gator will open for you seeing as you have 3 friends by your side. passing through the toll will leave you right at the endless highway, triggering the cutscene that showcases the place for you. after the cutscene, continue moving to the left until you encounter sweetheart. then, after she tells you how horrible of a person she is, go directly upwards and slash the cones with omori. after the screen transition, move towards the right until you reach a cave known as the "PEARL CAVE". if you've lended your clams to the shady mole, you'll find him (and your clams) sitting inside the pearl cave. ||
