It's like all other productions in the game, you deliver the goods, the goods get converted.

Though with a "normal" production you bring in cotton and get clothes, for example.
With the rollercoaster, you bring in multiple materials out of multiple productions, and you watch that rollercoaster slowly grow into a finished product that you can ride. 😄
